Cold soaked for 7 days. The fermentation had 35% whole cluster. Two week long fermentation at ambient cellar temperaatures. The grapes were then gently pressed and racked to barrels. Aged in 3 and 4 year old French oak barrels for 11 months. The young wine received a coarse filtration before bottling.
